Easy Low-Carb Spicy Meatballs Recipe

  • 1 lb ground beef
  • 1 onion
  • 1/2 cup grated parmesan cheese
  • 1 tbsp minced garlic (or paste)
  • 1/2 cup mozzarella cheese
  • 1 tsp freshly ground pepper
  • Sprinkle of salt and pepper
  • 1 tbsp of Paprika or curry powder (if you want a bit of a spicy tang)
  • Preheat the oven at 400 degrees Fahrenheit.
  • Mix it all together in a bowl and roll them up into meatballs.
  • Smother some butter/oil/ghee then place the meatballs in the oven for about 20 minutes until they are cooked to 170 degrees.
  • When they are done, add them to a pot of sauce of your preference or a slab of butter.
  • I like to serve them with extra cheese on top and veggies on the side. Then viola, delicious keto meatballs!

Keto Okonomiyaki

  • 1 tablespoon butter, softened
  • 1 tablespoon cream cheese, softened
  • 2 tablespoons almond flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 large egg

  • 3 ounces green cabbage, shredded
  • 2 slices bacon, thickly sliced

  • ¼ cup mayonnaise
  • 1 teaspoon unseasoned rice vinegar
  • (optional) BBQ or Worcestershire sauce
  • Sprinkle of bonito and/or nori flakes
  • Preheat a skillet over medium heat. In a small bowl mix together the 1/4 cup of mayonnaise and teaspoon of unseasoned rice vinegar.
  • Mix the butter and cream cheese in a mixing bowl.
  • Add the almond flour, baking powder, and salt to the mixing bowl.
  • Add the egg into the batter.
  • Mix the cabbage into the batter.
  • Cut the bacon slices horizontally into square pieces and fry in the preheated skillet.
  • Once the bacon is crispy, spread the okonomiyaki batter over the bacon and form a pancake.
  • Cover the pancake with a lid and cook for 5-7 minutes. You want the bacon and batter to be browned on the bottom and mostly cooked through before flipping.
  • Flip then repeat the other side for 5-7 minutes.
  • Once it's slightly browned on the sides, transfer the okonomiyaki to a plate.
  • Spread the mayo / rice vinegar (BBQ or Worcestershire sauce optional) mix you mixed earlier onto the pancake, sprinkle some flakes then serve!
